Rajneesh Suri, PhD, a professor in the LeBow College of Business, and Jonathan Deutsch, PhD, a professor in the Center for Food and Hospitality, were quoted in a Dec. 14 Food Navigator article about their recent research on the marketability of a new food category made of value-added surplus items.
